White truffles are right up there with Tahitian pearls and true love for their decadence and rarity. These two qualities never come cheap: A pound of white truffles costs around $2000 at gourmet food stores.
Truffle fans can indulge in the delicately-flavored, mushroom-like tuber for considerably less at Urbani Truffles’ White Truffle Festival. Each night of the festival, a different renowned local chef—from Revel, Firebird, Nobu and the Tribeca Grand Hotel—will give a cooking demonstration and serve an elaborate truffle-laced meal. Diners will receive two white truffle dishes, plus antipasti, drinks and dessert.
White truffles are so rare because they have proved nearly impossible to cultivate; they grow wild in regions of Italy and France and are found only by trained hounds. The proverbial “truffle pigs” were fired ³³ they turned out to love truffles as much as we do.
